Valtellina food in short

The food of Valtellina is mountain food. Buckwheat pasta, melted cheese, butter, potatoes and cured beef are the base, and several products carry protected names. Learning those names helps you shop and order with more confidence.

This guide is independent. It is not run by a consortium, a dairy or a restaurant, and it does not rank places to eat. It explains the dishes and products, with the rules that are published for them.

Pizzoccheri

The dish that most visitors come for.

What it is

Pizzoccheri are buckwheat noodles served with cheese. A local dairy describes the traditional pairing with Valtellina Casera DOP, and its ready-made version lists buckwheat and wheat pasta, potatoes, vegetables, cheese and butter.

Where it comes from

The regional tourism portal links the dish to Teglio. That is local tradition, not a dated invention, so treat any year you read for its origin with care.

Many recipes

A package list is not a universal recipe. Each kitchen varies the vegetables, cheese and butter, so expect differences from one table to the next.

Bresaola della Valtellina

Bresaola is air-dried beef, often served sliced with rocket and shavings of cheese. The name Bresaola della Valtellina is protected as an IGP. The consortium says that the raw beef comes mostly from cattle farms in Europe and South America.

So IGP does not mean that the animals were raised in Valtellina. It means that the product is made and matured according to the rules for the name. Look for the IGP wording on the label when you buy.

Bitto and Casera: the two DOP cheeses

Both are protected names with fixed rules.

CheeseMilk and originRules
Bitto DOPWhole cow's milk from mountain pastures in the province of Sondrio and in named neighboring municipalities of the provinces of Bergamo and Lecco; up to 10% goat's milkMade only from 1 June to 30 September; at least 70 days of ageing
Valtellina Casera DOPPartly skimmed cow's milk from farms in the province of Sondrio, processed in valley dairiesAt least 70 days of ageing

Do not narrow the Bitto area down to two valleys. The area for the name is wider than that. Casera is the cheese that traditionally goes into pizzoccheri.

Sciatt and other dishes

Sciatt are buckwheat and cheese fritters and part of the traditional cooking of Valtellina. Treat any single origin story with care.

On menus, expect Italian names for most dishes. Ask the kitchen what comes with a dish and whether it is the full local version. If you avoid gluten, ask before you order. A ready-made version of pizzoccheri lists wheat pasta next to the buckwheat, and sciatt are fritters.

The food pairs well with red wine from the terraces. See the wine page for the names to look for. Tirano is the usual arrival point by train from Milan. Teglio, shown here at dusk, is the village the regional portal links to pizzoccheri.

Crotti: cellars for wine, meat and cheese

Around Chiavenna, the crotti are natural rock cavities with a cooling air flow called "sorel". They were traditionally used to store wine, cured meats and cheese, and some are restaurants today. Do not assume that every crotto is open to the public at any time. Check before you go.

Details on the old town and the surrounding valley are on the page about Chiavenna.

A simple tasting order

One way to try the main products over a few meals.

Start with bresaola

Order it as a starter or buy a pack in a shop. Look for the IGP name on the label.

Then pizzoccheri

Order them as a main course and ask which cheese the kitchen uses.

Finish with the cheeses

Ask for Bitto and Casera side by side. Bitto is made only from 1 June to 30 September and ages at least 70 days. Casera also ages at least 70 days.

Valtellina food: frequently asked questions

Buckwheat noodles served with cheese, traditionally Valtellina Casera DOP. A dairy's ready-made version also lists wheat pasta, potatoes, vegetables and butter.

Where do pizzoccheri come from?

The regional tourism portal ties the dish to Teglio. No invention date is documented, so treat dated origin stories with care.

Is Bresaola della Valtellina made from local beef?

Not necessarily. The IGP name protects the product, and the consortium says the raw beef comes mostly from European and South American farms.

When is Bitto made?

Only from 1 June to 30 September, from whole cow's milk with up to 10% goat's milk, and it ages at least 70 days.
